Cinnamon
Cinnamon (Cinnamomum verum, synonym C. zeylanicum) is a small evergreen tree 10–15 metres (32.8–49.2 feet) tall, belonging to the family Lauraceae, and is native to Sri Lanka.
The leaves are ovate-oblong in shape, 7–18 cm (2.75–7.1 inches) long. The flowers, which are arranged in panicles, have a greenish color, and have a distinct odor. The fruit is a purple one-centimeter berry containing a single seed.
Its flavor is due to an aromatic essential oil that makes up 0.5% to 1% of its composition. This oil is prepared by roughly pounding the bark, macerating it in seawater, and then quickly distilling the whole. It is of a golden-yellow color, with the characteristic odor of cinnamon and a very hot aromatic taste. The pungent taste and scent come from cinnamic aldehyde or cinnamaldehyde and, by the absorption of oxygen as it ages, it darkens in colour and develops resinous compounds. Chemical components of the essential oil include ethyl cinnamate, eugenol, cinnamaldehyde, beta-caryophyllene, linalool, and methyl chavicol.
The name cinnamon comes from Greek kinnámōmon, itself ultimately from Phoenician. The botanical name for the spice—Cinnamomum zeylanicum—is derived from Sri Lanka’s former (colonial) name, Ceylon.
Cinnamon has been known from remote antiquity, and it was so highly prized among ancient nations that it was regarded as a gift fit for monarchs and other great potentates. Cinnamon is native to Sri Lanka. It was imported to Egypt from China as early as 2000 BC. It is mentioned in the Bible in Exodus 30:23, where Moses is commanded to use both sweet cinnamon (Hebrew קִנָּמוֹן, qinnāmôn) and cassia in the holy anointing oil; in Proverbs 7:17–18, where the lover’s bed is perfumed with myrrh, aloe and cinnamon; and in Song of Solomon 4:14, a song describing the beauty of his beloved, cinnamon scents her garments like the smell of Lebanon. It is also alluded to by Herodotus and other classical writers. It was commonly used on funeral pyres in Rome, and the Emperor Nero is said to have burned a year’s supply of cinnamon at the funeral for his wife Poppaea Sabina in 65 AD.
Up to the Middle Ages, the source of cinnamon was a mystery to the Western world. It is possible that the Arabs established an early monopoly on trading in cinnamon, and kept its origin a secret for hundreds of years. In Herodotus and other authors, Arabia was the source of cinnamon: giant Cinnamon birds collected the cinnamon sticks from an unknown land where the cinnamon trees grew, and used them to construct their nests; the Arabs employed a trick to obtain the sticks. This story was current as late as 1310 in Byzantium, although in the first century, Pliny the Elder had written that the traders had made this up in order to charge more. The first mention of the spice growing in Sri Lanka was in Zakariya al-Qazwini’s Athar al-bilad wa-akhbar al-‘ibad (“Monument of Places and History of God’s Bondsmen”) in about 1270. This was followed shortly thereafter by John of Montecorvino, in a letter of about 1292.
Indonesian rafts transported cinnamon (known in Indonesia as kayu manis- literally “sweet wood”) on a “cinnamon route” directly from the Moluccas to East Africa, where local traders then carried it north to the Roman market.
Cinnamon is harvested by growing the tree for two years and then coppicing it. The next year, about a dozen shoots will form from the roots. These shoots are then stripped of their bark, which is left to dry. Only the thin (0.5 mm) inner bark is used; the outer woody portion is removed, leaving metre-long cinnamon strips that curl into rolls (“quills”) on drying; each dried quill comprises strips from numerous shoots packed together. These quills are then cut into 5–10 cm lengths for sale.
Cinnamon has been cultivated from time immemorial in Sri Lanka, and the tree is also grown commercially at Tellicherry in southern India, Bangladesh, Java, Sumatra, the West Indies, Brazil, Vietnam, Madagascar, Zanzibar, and Egypt. Sri Lanka cinnamon has a very thin, smooth bark with a light-yellowish brown color and a highly fragrant aroma.
According to the International Herald Tribune, in 2006 Sri Lanka produced 90% of the world’s cinnamon, followed by China, India, and Vietnam. According to the FAO, Indonesia produces 40% of the world’s Cassia genus of cinnamon.
The name cinnamon is correctly used to refer to Ceylon cinnamon, also known as “true cinnamon” (from the botanical name C. zeylanicum). However, the related species, Cassia (Cinnamomum aromaticum), Saigon Cinnamon (Cinnamomum loureiroi), and Cinnamomum burmannii are sometimes sold labeled as cinnamon, sometimes distinguished from true cinnamon as “Chinese cinnamon”, “Vietnamese cinnamon”, or “Indonesian cinnamon”; many websites, for example, describe their “cinnamon” as being cassia. Ceylon cinnamon, using only the thin inner bark, has a finer, less dense, and more crumbly texture, and is considered to be less strong than cassia. Cassia has a much stronger (somewhat harsher) flavour than cinnamon, is generally a medium to light reddish brown, hard and woody in texture, and thicker (2–3 mm thick), as all of the layers of bark are used.
Cinnamon bark is widely used as a spice. It is principally employed in cookery as a condiment and flavoring material. It’s used in the preparation of chocolate, especially in Mexico, which is the main importer of true cinnamon. It is also used in the preparation of some kinds of desserts, such as apple pie and cinnamon buns as well as spicy candies, tea, hot cocoa, and liqueurs. True cinnamon, rather than cassia, is more suitable for use in sweet dishes. In the Middle East, it is often used in savoury dishes of chicken and lamb. In the United States, cinnamon and sugar are often used to flavour cereals, bread-based dishes, and fruits, especially apples; a cinnamon-sugar mixture is even sold separately for such purposes. Cinnamon can also be used in pickling. Cinnamon bark is one of the few spices that can be consumed directly. Cinnamon powder has long been an important spice in Persian cuisine, used in a variety of thick soups, drinks, and sweets. It is often mixed with rosewater or other spices to make a cinnamon-based curry powder for stews or just sprinkled on sweet treats.
In medicine it acts like other volatile oils and once had a reputation as a cure for colds. It has also been used to treat diarrhea and other problems of the digestive system. Cinnamon is high in antioxidant activity. The essential oil of cinnamon also has antimicrobial properties, which can aid in the preservation of certain foods.
Cinnamon has been reported to have remarkable pharmacological effects in the treatment of type II diabetes and insulin resistance. However, the plant material used in the study was mostly from cassia and only few of them are truly from Cinnamomum zeylanicum (see cassia’s medicinal uses for more information about its health benefits). Recent advancement in phytochemistry has shown that it is a cinnamtannin B1 isolated from C. zeylanicum which is of therapeutic effect on type II diabetes, with the exception of the postmenopausal patients studied on C. cassia. Cinnamon has traditionally been used to treat toothache and fight bad breath and its regular use is believed to stave off common cold and aid digestion.
Cinnamon has been proposed for use as an insect repellent, although it remains untested. Cinnamon leaf oil has been found to be very effective in killing mosquito larvae. The compounds cinnamaldehyde, cinnamyl acetate, eugenol and anethole, that are contained in cinnamon leaf oil, were found to have the highest effectiveness against mosquito larvae.
It is reported that regularly drinking of Cinnamomum zeylanicum tea made from the bark could be beneficial to oxidative stress related illness in humans, as the plant part contains significant antioxidant potential.
Excessive use of cinnamon bark may cause inflamed taste buds, tender gums, and mouth ulcers. Large quantities can change breathing, dilate blood vessels, and cause sleepiness, depression, or even convulsions.

There has been a lot of talk these days about cinnamon. According to some studies, cinnamon may improve blood glucose and cholesterol levels in people with Type 2 diabetes. The results of a study from 2003 in Pakistan showed lower levels of fasting glucose, triglycerides, LDL cholesterol and total cholesterol after 40 days with levels continuing to drop for 20 days after that.
The study was made up of 60 people with Type 2 diabetes who were divided into 6 groups of 10. Three groups received cinnamon in the form of capsules totaling 1, 3 or 6 grams of cinnamon a day. The other three groups received placebo capsules. The capsules were taken three times a day, after meals. All three levels of cinnamon showed results, leading researchers to believe that as little as 1 gram a day of cinnamon may benefit people who have Type 2.
There has been some debate in this country on whether “true” cinnamon was used for the study. According to the Food and Drug Administration (FDA), there are two types of cinnamon sold in the United States; cinnamomum zeylanicum nees or cinnamomum cassia (L.) blume. Most of the cinnamon sold in our grocery stores is cinnamomum cassia. The Pakistani study does list cinnamomum cassia as the cinnamon that was used.
Richard A. Anderson, Ph.D., CNS, of the the Beltsville Human Nutrition Research Center (BHNRC), is one of the original researchers in the Pakistan study. The BHNRC is under the United States Department of Agricuture (USDA). From results of his continued study of the components of cinnamon and their effect on blood glucose and cholesterol, he states,
“We have also shown that the active components of cinnamon are found in the water-soluble portion of cinnamon and are not present in cinnamon oil, which is largely fat-soluble. In addition to ground cinnamon consumed directly, one can also make a cinnamon tea and let the solids settle to the bottom or use cinnamon sticks, which make for a nice clear tea. Cinnamon can also be added to orange juice, oatmeal, coffee before brewing, salads, meats etc. The active components are not destroyed by heat.”
Based on these studies, it seems that cinnamon may lower blood glucose, triglycerides and LDL cholesterol in people with Type 2 diabetes. The fact that studies so far have involved a small amount of people and have not yet explored the long term benefits of cinnamon, would lead to the conclusion that there may not be enough evidence gathered yet, to support cinnamon as a major player against Type 2. But adding more cinnamon to already healthy lifestyle changes probably wouldn’t hurt either.

Regular use of the above process relieves loss of breath and strengthens the heartbeat. In America and Canada, various nursing homes have treated patients successfully and have found that as age the arteries and veins lose their flexibility and get clogged; honey and cinnamon revitalizes the arteries and veins.
INSECT BITES: Take one part honey to two parts of lukewarm water and add a small teaspoon of cinnamon powder, make a paste and massage it on the itching part of the body slowly. It is noticed that the pain recedes within a minute or two.
ARTHRITIS: Arthritis patients may take daily, morning and night, one cup of hot water with two spoons of honey and one small teaspoon of cinnamon powder. If taken regularly even chronic arthritis can be cured.
In a recent research conducted at the Copenhagen University, it was found that when the doctors treated their patients with a mixture of one tablespoon Honey and half teaspoon Cinnamon powder before breakfast, they found that within a week out of the 200 people so treated practically 73 patients were totally relieved of pain and within a month, mostly all the patients who could not walk or move around because of arthritis started walking without pain.
HAIR LOSS: Those suffering from hair loss or baldness, may apply a paste of hot olive oil, one tablespoon of honey, one teaspoon of cinnamon powder before bath and keep it for approx. 15 min. and then wash the hair. It was found to be effective even if kept on for 5 minutes.
BLADDER INFECTIONS: Take two tablespoons of cinnamon powder and one teaspoon of honey in a glass of lukewarm water and drink it. It destroys the germs in the bladder.
TOOTHACHE: Make a paste of one teaspoon of cinnamon powder and five teaspoons of honey and apply on the aching tooth. This may be applied 3 times a day till the tooth stops aching.
CHOLESTEROL: Two tablespoons of honey and three teaspoons of Cinnamon Powder
mixed in 16 ounces of tea water, given to a cholesterol patient, was found to
reduce the level of cholesterol in the blood by 10% within 2 hours. As mentioned for arthritic patients, if taken 3 times a day, any Chronic cholesterol is cured. As per information received in the said journal, pure honey taken with food daily relieves complaints of cholesterol.
COLDS: Those suffering from common or severe colds should take one tablespoon lukewarm honey with 1/4 spoon cinnamon powder daily for 3 days. This process will cure most chronic cough, cold and clear the sinuses.
INFERTILITY: Yunani and Ayurvedic Medicine have been using honey for thousands of years to strengthen the semen of men. If impotent men regularly take two tablespoon of honey before going to sleep, their problem will be solved.
In China, Japan and Far-East countries, women, who do not conceive and need to strengthen the uterus, have been taking cinnamon powder for centuries. Women who
cannot conceive may take a pinch of cinnamon powder in half teaspoon of honey

*NOTE:The honey used needs to be REAL RAW UNPASTEURIZED HONEY. If it says PURE honey it is most likely pasteurized. It is best to only buy honey that says RAW or UNPASTEURIZED on the label. The difference is that the enzymes are all heated out of the pasteurized honey.
Cinnamon and Honey formula for weight loss:
This should be prepared at night before going to bed.
1. Use 1 part cinnamon to 2 parts raw honey. 1/2 tsp cinnamon to 1 tsp honey is recommended but can use more or less as long as in the ratio of 1 to 2. — so 1 tsp cinnamon to 2 tsp raw honey is ok too as an example.
2. Boil 1 cup…that is 8 oz of water.
3. Pour water over cinnamon and cover and let it steep for 1/2 hour..(30 minutes)
4. Add honey now that it has cooled. Never add honey when it is hot as the heat will destroy the enzymes and other nutrients in the raw honey.
5. Drink 1/2 of this directly before going to bed. The other 1/2 should be covered and refrigerated.
6. In the morning drink the other half that you refirgerated…but do not re-heat it…drink it cold or at room temp only.
Do not add anything else to this recipe. No lemon, no lime, no vinegar. It is not necessary to drink it more time in a day…it is only effective on an empty stomach and primarily at night.
This works for most people. Inches are lost before any measurement on the scales. This program will cause significant inches lost…but you will reach a plateau and may not lose anymore. This is because the cinnamon and honey cause a cleansing effect in the digestive tract and cleans out parasites and other fungus and bacteria that slow down the digestion…causing a toxic build up. (Lowers pH) Once this is all cleaned out then you will most likely have the weight loss slow down.

What is the Scientific Evidence for Cinnamon’s Health Benefits?
Recent studies have found that cinnamon may have a beneficial effect on blood sugar.
One of the first human studies was published in 2003 in a medical journal called Diabetes Care. Sixty people with type 2 diabetes took 1, 3, or 6 grams of cinnamon in pill form daily, an amount roughly equivalent to one quarter of a teaspoon to 1 teaspoon of cinnamon.
After 40 days, all 3 amounts of cinnamon reduced fasting blood glucose by 18 to 29%, triglycerides by 23 to 30%, LDL cholesterol by 7 to 27%, and total cholesterol by 12 to 26%.
